Just wondering at what stage the pod should start drying out?

Our germination stage is 10 days and your seedling should have emerged and spread it’s cotyledons. (The first 2 leaves won’t have jagged edges on them, all the rest will) At this point, you are wanting the root to emerge from the bottom of the coco pod and go searching for water/food.
Warning! In stage 2, we don’t fill the water as high, to help dry out that coco pod to fight damping off. As long as your roots are in the water or the bubble splash zone, you are fine during this stage to raise the coco pod a bit. Once stage 3 hits, the water level returns to high for the remainder of the grow, so you might want to make your final adjustment in this stage.
