Should I be trimming more fan leaves?

I’m at week 5 of flowering on a Northern Lights strain and am wondering if I need to trim down the fan leaves to expose more buds to light, however, I’m concerned not to overdue it or stress the plant too much. I have trimmed a couple times already

Be gentle but your answer is in the quote above. Clip evenly and only the ones that may be directly blocking a bud site. You’re in the same boat with my plant where it became like a bushy indica and you don’t want to strip all the smaller leaves. Sativas tend to be easier for trimming but can grow taller and lankier.

I recommend removing all of the undergrowth that isn’t getting any direct light. Leave 1 foot of leafy canopy and remove the rest. (Measure from the top down) This is called lollipopping, because it makes your plant look like a lollipop!
