Harvest and O2

I’m getting ready to begin harvesting and one thing keeps nagging at me. When it comes to curing: do you want Oxygen in the jar, or do you try to remove it? I have what are “self burping” jar lids. They came with an O2 extractor pump. I think all they do is create a vacuum in the jar that is immediately released, via a valve, drawing in outside oxygen. Essentially they appear to Mimic just cracking the mason jar lids—not leaving them open for any period of time. does this seem like a good idea? Most curing recipes include leaving the mason jar lid off for about 20 minutes. Thanks in advance.
