Its totally ok to do it now or wait until transition, I start in as soon as I enter late veg. You can do it gradually or all at once its up to you. I would just try to focus on not removing bud sites unless you develop a technique like some who only want the main colas.
Example: 20% or less at the bottom is more than enough.

Is the bud sites just the non fan leaf portions of the stem then? I couldn’t find any examples via search

In this picture you can see the buds sites just starting to grow.
I only circled a couple…
In this picture the plant has been stripped of mainly everything to focus on the bud sites.
There are fan leaves (big ones) water travels through to feed the plant.
Sugar leaves (small leaves) that holds the THC/CBD for edible making.
Small leaves attached to the buds.
And buds ( center flowers) the meat of the plant that is smoked. These don’t fully develop until flower stage.
