Did you say steady 65 degrees? That’s cold and is most likely the reason for your slowed growth. Plants are okay with high 60’s at night but during the day to get her to grow you need temps in mid 70’s. Also, that humidity is great for germination and seedlings but is a little high for veg.
Those roots look a little gnarly as well. Roots get browned from the nutrients but they look very “woody” and stiff which I have never seen before. I am sticking with your temps being too cold.
